Off the back of WelleCo's launch of The Super Elixir™ in Mixed Berry, Chloe finds a new food fixation.
Think half high-protein chia pudding, half banana smoothie. This recipe — thanks to WelleCo's Super Elixir™ in Mixed Berry — could be your new summer fave.
Recipe (serves 3-4):
Chia pudding:
- 1/2 cup chia seeds
- 1/2 cup Vanilla Nourishing Protein
- 2 cups soy milk
- 2 tbsp rice malt syrup or choice of liquid sweetener
- 1 tsp vanilla extract
Green banana smoothie:
- 4 frozen bananas
- 2 tbsp The Super Elixir™ Mixed Berry
Optional garnish:
- coconut yogurt
- fresh berries
1. In a medium bowl, add the chia seeds, protein powder, soy milk, rice malt syrup and vanilla extract and mix well.
2. Cover in cling wrap and set in the fridge for 4 hours or overnight.
3. To a high-speed blender, add the frozen bananas and The Super Elixir™ Mixed Berry. Process until smooth.
4. Form the parfaits by spooning the chia pudding at the bottom of a jar and topping with the banana smoothie. Optionally garnish with coconut yoghurt and fresh berries.
