Choc Mint Pops

Who would of thought you could get your 2 teaspoons of SUPER ELIXIR Alkalising Greens in ice cream? One of our favourite recipes developers, Elsa (from @elsas_wholesomelife), has the healthiest (and most stylish) way of beating the summer heat.
You'll need
1 cup cashews
3/4 cup almond / coco milk
1 heaped tbsp SUPER ELIXIR Alkalising Greens
1/4 avocado
2 tbsp maple syrup
Mint essential oil to taste (about 4-5 drops)
2 tbsp coconut oil
1/4 tsp guar gum/ tapioca starch
1 tbsp cacao nibs + extra to sprinkle
1/2 block dark mint chocolate
Add all ingredients, except the chocolate and nibs, to a high powdered blender (vitamix) and blend until smooth.
Stir through the cacao nibs.
Pour into ice cream moulds and insert paddle pop sticks and place in freezer overnight.
Remove from moulds, drizzle with melted chocolate and sprinkle over nibs. Return to freezer to set chocolate.
Eat straight from freezer.
