Chocolate Shortbread

 ¼ cup Nourishing Protein Chocolate

1 cup almond flour

½ cup flax meal

2 tablespoons hemp seeds

3 pitted dates

2 tablespoons almond milk

1 cup salty caramel

 

Toppings

100g dark chocolate

1/2 cup salty caramel

1 tablespoon coconut oil

Dark chocolate sprinkles

Coarse sea salt

 

METHOD

To make the raw chocolate protein shortbread, place the almond flour, Nourishing Protein Chocolate, flax meal, hemp seeds, dates and almond milk in a food processor. Blitz until it starts forming a ball.

 

Press into a small rectangular dish (about 6 x 4 inches) and pour over the salty caramel.

 

To make the topping, place the dark chocolate and coconut oil in a small pan and melt together. Pour over the caramel and spread until all covered. While it is setting, sprinkle liberally with sea salt and chocolate sprinkles.

 

Let rest in the freezer for about an hour for the caramel to harden. To cut, dip a large knife in hot water and use a slow sawing motion to cut through the caramel and cookie base.

 

Clean the knife and repeat the process until you have cut 12 squares. Serve immediately or leave in the freezer until ready to eat.
