Mixed Berry and coconut chia pudding

To celebrate the launch of our new Super Elixir™ in Mixed Berry, @vitaminb_nutrition creates one of her delicious (and healthy!) culinary masterpieces.

Ingredients:

2 tbsp chia seeds

2 tsp Super Elixir™ Mixed Berry

1⁄2 cup coconut milk

1 tbsp coconut yogurt

1/2 tsp vanilla

 

Toppings:

A handful of raspberries

1 tbsp hemp seeds

1 tbsp shredded coconut

1 tbsp cacao nibs

1 tsp honey

 

Method:

1. Mix the chia seeds, coconut milk, yoghurt and The Super Elixir™ powder in a small jar or bowl. Leave on the counter at room temperature to thicken for about 15 minutes.

2. Once thickened, give the mixture another stir and add a splash of milk if needed. Place mixture in the refrigerator overnight.

3. Top with raspberries, hemp seeds, coconut, cacao nibs and a drizzle of honey to serve. Enjoy!
